Muzafir or Sewai Ka Zarda | Easy simple way of making zarda

Vermicelli 2 cups, borken
Milk 2 cups
Unsweetened khoya 1 cup
Cardamoms 6
Saffron or yellow
food colour Pinch
Cloves 4
Almonds and pistachios 6 each, peeled and finely chopped
Ghee 1 1/2 cups
Heat a half cup of ghee in a pan and fry the vermicelli till it starts to turn light brown.Add khoya, cook stirring continuosly for 5 minutes and remove from heat.In a karhai heat the remaining ghee, add cloves and cardamom, after a minute add the chopped nuts and sugar when the sugar dissolves add vermicelli, cook stirring all the time, add food coiour or saffron, lower heat.When the ghee separates from vermicelli remove from heat. Serve with fresh cream.
Freeze khoya sprinkled with a little sugar to keep it fresh longer.
