Masala Bhari Mirch ka Achar Recipe

Red kashmiri chillies 12 whole
Cumin seeds 2 tbsp
Coriander seeds 3 tbsp
Fennel seeds 1/2 tbsp
Rai 1 tbsp
Kalonji 1 tbsp
Temarind 4 tbsp,thick paste
Salt to taste
Mustard oil 1 cup
Roast cumin seeds,coriander seeds,rai and fennel seeds separatly and grind to a fine powder.Sift through a sieve,discard thick pieces,mix kalonji,tamarind and salt with the powdered mix and set aside for an hour.Wash the red chillies and boil in a little water till the chillies puff up.Remove and dry by spreading on a kitchen towel.Slit chillies in the middle and stuff with the mixed spices.Heat oil till hot.remove from heat and then let it cool.Add stuffed chillies to the cooked oil,and leave for three days when they will be ready ti use.
To give curries a bright colour,boil and grind the red chillies before using.
