Khichra Recipe | How to make Khichra | Best Recipe

Mutton,beef or chicken 1 kg,boneless
Moong lentil 1/2 cup with peel
Masoor lentil 1/2 cup
Chana lentil 1/2 cup
Mong lentil 1/2 cup
Wheat 1+1/2 cup
Rice 1/2 cup
Garam masala 1 tbsp
Soda bicarbonat 1 tbsp
Ingredients for garnish abd to serve separatly
Mint 1 binch finly chopped
Fresh coriander 1 bunch finly chopped
Green chillies 10,finly chopped
Lemons 6,cut into eight pieces
Cumin seeds 2 tbsp,roasted and powdered
Ingredients for Meat
Ginger/garlic paste 2 tbsp
Red chillies 1+1/2 tbsp ,powdered
Coriander 2 tbsp.powdered
Garam masala 1/2 tbsp
Turmeric 1 tbsp
Salt to taste
For Baghar
Onion 4 medium,finly sliced
Oil 1+1/2 cups
Wash wheat in warm water and soak for 1 hour.Drain,put in a along with 2-3 glasses of water and 2 t5bsp of oil.Cook on low heat,when the wheat starts to soften add 1 tbsp of bicarbonae of soda.Cook till very soft.Wash all lentils with hot water and soak for 1/2 hour.Cook on low heat till tender,drain,cool and grind.Boil rice till very soft,set aside.In a large pot combine meat,all speices and oil and cook on medium heat stirring frequantly.When the liquid from meat has dried,add the softened wheat with a cup of water ,stir and cook till meat becomes very tender and mixes with wheat.Then add the lentils and rice with a little water,contiue to stir.Put a tawa on heat and place the pot on it.If the khichra seems too thick add two more glasses of water and leave on very low heat, stirring frequantly.When all ingredients have Combined completely khichra is ready.Make a baghar by frying onions in oil till golden brown.Pour some over the khichra,drain thr remaining onions on kitchen paper.Sprinkle khichra with some of the greens for garnish. Serve with green lemons,and roasted spices,save the hot oil used for frying onions and serve in a small bowl.
Soda bicarbonate helps tenderize wheat,so it does not have to be cooked for a long period.
