Chinese Shrimp Omelette Recipe

Shrimps 20,clean and chopped fine
Spring onions 2,chop leaves and onions,keeps separate
Eggs 4,beaten with 1 tbsp water
White pepper 1 tbsp,powdered
Black pepper 1/2 tbsp,powdered
Soya sauce 2 tbsp
Brown vinegar 1 tbsp
Cornflour 1 tbsp
Salt to taste
Oil 2 tbsp
Ingredients for Sauce
Chicken stock 1 cup
Oyster sauce 1 tbsp
Cornflour 1 tbsp
Marinate the chopped shrimps in vinegar and white pepper for five minuts.Heat oil in a frying pan nd fry the shrimps lightly,add white part of onions when shrimps change colour.Lower heat after 2 minutes.Mix the cornflour ,salt and black pepper with the beaten egg,and pour over the shrimps,tilt pan to spread out the egg mixture.Fry one side on medium heat till golden,turn over and fry the other side.Remove to a shallow dish and cut into 4 equal parts.Keep hot.Sauce – Combine the ingredients and cook in a small pan till it thickens. Sprinkle the omelette with spring onion leaves and pour the sauce over it.Serve hot with toasted slices of bread.
